- 1 cup full-fat cottage cheese (blended smooth)
- 1/4 cup unsweetened cocoa powder
- 1/4 cup natural peanut butter or almond butter
- 1/3 cup allulose or monk fruit sweetener
- 2 tbsp melted coconut oil or butter
- 1 tsp vanilla extract
- A pinch of sea salt
Instructions
- Blend 1 cup of full-fat cottage cheese in a high-speed blender until completely smooth.
- Add cocoa powder, nut butter, sweetener, vanilla extract, melted coconut oil or butter, and sea salt to the blender.
- Blend again until the mixture is thick and silky smooth.
- Taste and adjust sweetness or add a splash of almond milk if too thick.
- Line a loaf pan or dish with parchment paper and spread the mixture evenly using a spatula.
- Refrigerate for at least 3 hours or freeze for 45 minutes until firm.
- Slice into squares and store in an airtight container.
