- 1 lb lean ground beef (90%+)
- 2 medium sweet potatoes, diced
- 1 tbsp olive oil
- 1/2 tsp smoked paprika
- Salt and pepper to taste
- 1/2 tsp garlic powder
- 1/4 tsp chili flakes (optional)
- 1 cup cottage cheese (whipped or regular)
- 1 ripe avocado, diced (optional)
- Chopped scallions or herbs for garnish (optional)
- Hot honey or lemon juice (optional toppings)
Instructions
- Preheat oven to 400°F (200°C).
- Dice sweet potatoes into small cubes, toss with olive oil, salt, and paprika.
- Roast sweet potatoes for 20–25 minutes, flipping once halfway.
- Heat a skillet with a touch of oil, add ground beef and season with garlic powder, pepper, and chili flakes.
- Cook beef until browned and fully done, about 7 minutes. Drain excess fat if needed.
- In a serving bowl, layer roasted sweet potatoes, seasoned ground beef, and 1/2 cup cottage cheese.
- Top with diced avocado, scallions, hot honey, or lemon juice as desired.
Notes
Use freshly roasted sweet potatoes and whipped cottage cheese for the best texture. Adjust portions to meet your macro goals.
