- 1 cup full-fat cottage cheese (blended until smooth)
- 1½ cups semi-sweet chocolate chips (or chopped baking chocolate)
- 2 tablespoons unsalted butter
- ½ cup sweetened condensed milk
- 1 teaspoon vanilla extract (optional)
- Pinch of sea salt
Instructions
- Blend the cottage cheese until completely smooth—no lumps should remain.
- In a saucepan over low heat, melt the chocolate chips and butter, stirring constantly.
- Once melted, add the blended cottage cheese and sweetened condensed milk. Stir until smooth and glossy.
- Stir in vanilla extract and sea salt. Cook for 2–3 more minutes on low heat.
- Pour the mixture into a parchment-lined loaf pan and smooth the top.
- Chill in the fridge for at least 3 hours, or until fully set.
- Cut into squares and serve. Store in an airtight container in the refrigerator.
Notes
Use full-fat cottage cheese for the best creamy texture. Blend thoroughly to avoid lumps. Let the fudge cool slightly before chilling to prevent cracking.
