Ingredients

  • 1 cup full-fat cottage cheese (blended until smooth)
  • 1½ cups semi-sweet chocolate chips (or chopped baking chocolate)
  • 2 tablespoons unsalted butter
  • ½ cup sweetened condensed milk
  • 1 teaspoon vanilla extract (optional)
  • Pinch of sea salt

Instructions

  1. Blend the cottage cheese until completely smooth—no lumps should remain.
  2. In a saucepan over low heat, melt the chocolate chips and butter, stirring constantly.
  3. Once melted, add the blended cottage cheese and sweetened condensed milk. Stir until smooth and glossy.
  4. Stir in vanilla extract and sea salt. Cook for 2–3 more minutes on low heat.
  5. Pour the mixture into a parchment-lined loaf pan and smooth the top.
  6. Chill in the fridge for at least 3 hours, or until fully set.
  7. Cut into squares and serve. Store in an airtight container in the refrigerator.
