Instructions
- Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
- Separate the eggs carefully, placing yolks in one bowl and whites in another.
- Blend the cottage cheese until it’s creamy and lump-free using a hand blender or food processor.
- Whip the egg whites with cream of tartar in a clean, dry bowl until stiff peaks form.
- Mix yolks, blended cottage cheese, salt, and optional starch until smooth.
- Gently fold the egg whites into the yolk mixture in batches using a spatula to keep the batter airy.
- Scoop onto a baking sheet in 6 equal mounds and shape into rounds or ovals.
- Bake for 25–30 minutes until golden brown and firm to the touch.
- Cool for 5–10 minutes on a wire rack before serving or storing.
