Decadent, creamy, and protein-packed, this cottage cheese fudge blends rich chocolate with a healthy twist for a dessert you’ll want on repeat.

- 1 cup full-fat cottage cheese
- 1 cup semi-sweet or dark chocolate chips
- 1–2 tablespoons maple syrup (to taste)
- ½ teaspoon vanilla extract
- 1 teaspoon coconut oil (optional, for melting chocolate)
Instructions
- Melt chocolate chips using microwave in 30-second intervals or on stovetop with a double boiler. Stir until smooth and glossy. Add coconut oil if using.
- In a high-speed blender or food processor, combine melted chocolate, cottage cheese, maple syrup, and vanilla extract.
- Blend on high for 30–60 seconds until smooth and silky, scraping down sides as needed. Add a splash of milk if too thick.
- Line an 8×8” dish with parchment paper and pour in fudge mixture. Spread evenly and tap to remove air bubbles.
- Optional: Top with chopped nuts, coconut flakes, or mini chocolate chips.
- Freeze for 3–4 hours or overnight until firm.
- Remove from pan and slice into squares. Let sit 5 minutes before serving.
Notes
Store in an airtight container in the freezer for up to 2 months. Layer parchment paper between slices to prevent sticking. Let thaw 5–10 minutes before eating.
