Description

Decadent, creamy, and protein-packed, this cottage cheese fudge blends rich chocolate with a healthy twist for a dessert you’ll want on repeat.


Ingredients

  • 1 cup full-fat cottage cheese
  • 1 cup semi-sweet or dark chocolate chips
  • 12 tablespoons maple syrup (to taste)
  • ½ teaspoon vanilla extract
  • 1 teaspoon coconut oil (optional, for melting chocolate)

Instructions

  1. Melt chocolate chips using microwave in 30-second intervals or on stovetop with a double boiler. Stir until smooth and glossy. Add coconut oil if using.
  2. In a high-speed blender or food processor, combine melted chocolate, cottage cheese, maple syrup, and vanilla extract.
  3. Blend on high for 30–60 seconds until smooth and silky, scraping down sides as needed. Add a splash of milk if too thick.
  4. Line an 8×8” dish with parchment paper and pour in fudge mixture. Spread evenly and tap to remove air bubbles.
  5. Optional: Top with chopped nuts, coconut flakes, or mini chocolate chips.
  6. Freeze for 3–4 hours or overnight until firm.
  7. Remove from pan and slice into squares. Let sit 5 minutes before serving.

Notes

Store in an airtight container in the freezer for up to 2 months. Layer parchment paper between slices to prevent sticking. Let thaw 5–10 minutes before eating.
